Ingredients:
- 3 ripe tomatoes (grated)
- 4 eggs
- 2 tbsp olive oil
- Crumbled feta cheese
- Salt, pepper
- Fresh oregano or basil
Method:
Heat olive oil in a pan and cook the grated tomatoes until slightly thickened. Beat the eggs and pour them into the tomato mixture, stirring gently until softly scrambled. Add feta, season with salt, pepper and herbs and serve warm with fresh bread.
